Not
everyone knows that the Chianti region is famous also for
another farm product that is even more typical and specific
than wine: extra virgin olive oil. Olive oil, even more than
wine, is influenced by factors of climate and soil. Casaloste
extra virgin olive oil is characterized by low acidity, an
excellent polyphenolic component that confers a slightly spicy
taste and the aroma of fresh fruit and apple. Fattoria Casaloste
joined to the DOP(Denominazione Origine Protetta) Chianti
Classico.
As with wine, before bottling, extra virgin olive oil is submitted
to analysis and panel tests that evaluate the olive oil from
the standpoint of smell and taste.
